They had the most humble of beginnings. Surfing Craigslist ads led to the discovery of small, yet quaint location on South Mobile Street. There was room for five tables inside and a modest deck for additional outdoor seating overlooking Mobile Bay. Thyme learned to thrive for five years in business with those five tables. I’m sure the sunsets helped, yet what an incredible success story. With the help of a local investor who believed in their collective genius, Thyme on Section has become a downtown contender.
The secret to Thyme’s longevity on the Fairhope culinary scene, has to be due in large part to the diversity of its menu offerings. The strategy is to meet their customer where they are, from palate to pocketbook. If you can’t afford to fine dine at night, then come in for lunch and select from an array of signature sandwiches, like the Thyme Burger. You’ll find a generous happy hour selection, accompanied by an incredible tapas menu, for those unable to splurge on the filet. Oh and let’s not forget their amazing Sunday Brunch, a perfect go-to after church.
Their marketing efforts, aside from social media posts, is all fork to mouth. Adrian and Rachel focus on the food and their raving fans focus on the message. As mentioned, it’s not all about pork belly and quail eggs. Funny enough, their truffle aioli fries turned out to be word of mouth gold. Personally, I love the seasonal rotations of the menu and think that the addition of a small plate paired with an early evening cocktail is brilliant. Their tapas menu includes a short list of big, tasty titles, like smoked mussel dip, fried havarti, red wine sausage, and house favorite ceviche tostada.
Few entrees, although equal in preparation and presentation, can rival the popularity of their filet. Brunch shrimp and grits has built a substantial following as well, along with Granny’s famous coconut cake. How adorable is it that Rachel’s grandmother makes all their desserts from scratch?
